
While John Besh expands his restaurant empire in New Orleans, another local restaurant team has quietly opened Vacherie in the Hotel St. Marie, a boutique French Quarter hotel.
David Smith, Doug Hary, and Jarred Zeringue, the principles behind CBD lunch stalwarts Cafe at the Square and Between the Bread, and French Quarter brunch favorite EAT, opened Vacherie last week.
The restaurant name is a nod to executive chef and partner Zeringue’s hometown in St. James Parish, and the menu pays tribute to south Louisiana’s “German Coast”, a string of parishes along the Mississippi River southeast of New Orleans. Look for dishes like Eggs Lecaze (think: Eggs benedict with hogs head cheese on a biscuit), boudin benedict, and johnnycakes for brunch, and rabbit cassoulet and crawfish etoufee on the dinner menu.
The bar inside Vacherie also offers a small plates menu for snackers. Highlights include the pimento cheese gritcake over smothered collards and pork sausage sliders with house-pickled onions.
